Enchiladas
A delicious Mexican-inspired meal to change up your today Taco Tuesday.
Ingredients
- Flour tortillas
- Shredded cheddar cheese
- Enchilada sauce
- Sour cream
- Cilantro
- Choose your filling: Mexican shredded chicken, Mexican seasoned beef, veggies (we use mushrooms, peppers, and onions)
Directions
Leaving space on the ends to fold, add shredded cheese and filling out choice down the center of each tortilla. Do not overfill, or you will not be able to roll it up. Roll the enchiladas closed by first folding in one short side, then one long side, then the other short side, and then roll the whole thing over the last long side of the tortilla.
Heat oil in a pan over medium heat and place your enchiladas fold-side down. Once the bottom gets slightly golden, flip and cook the other side. Flip over once more and reduce the heat. Pour enchilada sauce over the top, sprinkle on some shredded cheese, and cover the pan. Once the cheese is melted, remove from heat. Serve with sour cream and cilantro on top.
