White Chocolate Cranberry Cookies
The perfect sweet holiday treat with bursts of fresh tart cranberry.
Ingredients
Makes about two dozen cookies. Inspired by a Betty Crocker recipe.
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup softened butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tbsp vanilla extract
- 1 1/2 cups cranberries
- 1/2 cup white chocolate chips
Directions
- Preheat oven to 350°F. Line greasebaking sheets or line with parchment paper.
- In a small bowl, combine flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugars. Add egg and vanilla and mix until fully combined.
- Add dry ingredients a little at a time until dough forms. Add cranberries and white chocolate chips. These will not combine evenly.
- Form balls and place on cookies sheet. I tried to make sure each cookies had 3 cranberries. You will need to work the dough around the cranberries in order to form a ball. My dough balls were about 1 1/4 inches large and I placed them about 1 1/2 inches apart.
- Bake about 13 minutes, until just golden brown.
